Pocket Porridge

• 12-muffin pan or a loaf tin
• Large mixing bowl
• 2 large bananas (or 3 small-medium)
• 350g fine-rolled oats
• 500g plain vegan yogurt
• 150g chocolate chips (you can also add other toppings like raisins / cranberries / cacao nibs / coconut flakes / pecans / walnuts )
• 1/2 teaspoon salt
• 2 teaspoons baking powder

  1. Mash the banana in a bowl with a fork
  2. Mix the rest of the ingredients in the bowl
  3. Add the mixture into the loaf pan or in the muffin tins
  4. Bake at 350ºF for 15-20 minutes or until a slight golden brown
  5. Let them cool then stuff them in your jersey pockets on your next bike ride or carry with you on an adventure
