Dark Chocolate Maca Granola
This granola doesn’t ever last me two full days. Mostly because it’s perfect for breakfast and all day snacking. Best of all, it takes like two minutes to make. Eat it like cereal, as a smoothie bowl topping, add to a tortilla with some fruit and almond butter, or store in a container for snacking.
- 2 cups oats
- 1 tablespoon maca powder
- 1.5 teaspoon cocoa
- A sprinkle of pink Himalayan salt/ sea salt
- Nuts: almonds, walnuts, pecans
- Pumpkin seeds
- Coconut flakes
- 3-4 tablespoons of maple syrup (depending on how sweet you want it. We usually add just enough to coat most of the oats.
Tiny drizzle of coconut oil (unrefined)- Chia seeds
- Chocolate chips (optional)
Preheat oven to 400ºF. Mix all dry ingredients in a bowl, then add the syrup and coconut oil and mix again. Spread out on a cookie sheet. Cook for 10 minutes, then stir it a bit, and cook for another 10 or until golden brown. Let it cool for about 10 minutes until crispy.
